Adult male blesbok, eland, gemsbok, red hartebeest, impala, springbok and black wildebeest were cropped bimonthly and meat quality tests carried out with regard to fat and moisture content, colour, tenderness, muscle fibre diameter, intensity and acceptability of flavour, Several statistically significant interspecies differences were established.  The springbok venison was better in several tests that that of the other species.
